Week 3: It’s All Greek to Me

Ever since I had a lamb burger earlier this week, I have been craving greek food like crazy.  So what better thing to make as my meal prep for next week than some yummy greek food!

Close to where I live we have a few greek resturants with the best gyros and lemon chicken soup ever — I mean my whole family craves this soup, especially when we are feeling under the weather.  I have always thought about trying to make the lemon chicken soup but figured it was easier to just go grab a large to-go container from the resturant instead.  Since I know how delicious they make it, making this soup will probably be a challenge – but I accept it!  Normally with this soup I have pita bread with it, but since I am trying to not eat so many carbs and staying away from gluten…I am not sure what I will have with it.  This will take some thought…

Meal #1 down….onto meal #2!

What else to make..what else to make.  I really need two recipes for the week so that I don’t get bored/burnt out of eating the same thing EVERY SINGLE DAY.  I’m a huge fan of meatballs – I don’t know what it is about them, but I find that they are the perfect entree to a meal.  I am sure I can find and modify a recipe to be gluten-free and dairy-free for lamb meatballs…maybe with a homemade tzatziki sauce (insert hear eye emoji).  In addition to the lamb meatballs, a nice greek side salad would pair well with it to get to a nice 400-ish calorie meal.

What are some of y’alls favorite greek recipes?! I would love to try them out.  I am always looking for new recipes and love trying new things as well.  Can’t wait to see how Week 3 turns out!
