Week 2 is here and I am ready. After week 1 behind me, I feel like I am on the right path to being my best and healthiest self! This week, one of my friends is bringing me lunch 2 days so I am only going to be making 1 meal for myself this week. I have always been a fan of Shepards Pie, but didn’t know of a way to make it more healthy…that is until I discovered that I LOVE using califlower as a substitue for mashed potatoes.
The plan for this week is to make 6 servings of Shepards Pie with a cheese (dairy-free of course) and califlower topping. There is just something about grey skies and Shepards Pie that makes my insides feel all good inside!
Besides Shepards Pie, I am going to slow cook some Brisket with banana peppers as well to individual package into 4oz servings and put it in my freezer as a good “emergency” dinner/lunch. Plus, it is great with eggs! Other things I love to eat Brisket with is califlower nachos and deconstructed brisket tacos (oh my goodness — my mouth is just salivating thinking of those two things – will definetly have to share my recipes with both of those! #SuperBowl post maybe?!)
Since I am posting this “The Plan” on Tuesday (later than I would have liked) – I am actually going to cook the Shepards Pie and Brisket today and hopefully have “The Reality” post tomorrow! I am excited to see how it turns out because I have never made Shepards Pie before — worst case, I eat it anyway because I know that it is healthy for me and don’t make it again…but I have a good feeling about this one.
