Week 1: Seafood Galore

This past week, work has been less than ideal – but I am so incredibly thankful that I work with one of my best friends who was meal prepping for her and her boyfriend last weekend and surprised me with some healthy lunches for the week!  How sweet and considerate is that?!  She knows that my goal of getting healthy is one of my top priorities and didn’t want me starting off the new year on a bad foot.  Also, my amazing mom has been very supportive and making sure I have soups and veggies available when I am at home.  The “official” week 1 went off without a hitch and I am on my way to accomplishing my goals — baby steps, nothing worth having happens over night!

Week 1 of meal prepping will commence Monday (love long holiday weekends), but I need to figure out what I want to make for lunches and dinners next week.  I think I am in the mood for scallops and fish tacos…let the researching commence!  Some of the requirements I want for these recipies is that they are gluten-free, dairy-free, and can be reheated while still tasting delicious.

With the scallops, a califlower mash with roasted broccoli sounds like a winner – califlower mash is one of my new favorites! It’s so delicious (and if you aren’t a huge fan, do 50% mashed potato and 50% mashed califlower). Each of these meals I need (at least) 4 servings – I am paying back my friend for the delicious lunches from this past week.  Also, my caloric goal is around 400ish calories per meal!
